â How to brew: Add 1 heaped teaspoon of Loumidis per cup of cold water into a briki. Stir, then heat slowly over low heat until a thick foam (kaimaki) rises. Remove from heat immediately â never let it boil. Pour gently into the cup and wait 1â2 minutes for the grounds to settle before drinking.
